Tembleque
Creamy coconut pudding in mango puree, raspberry coulis, and fresh blueberries.
Tembleque is a Puerto Rican coconut pudding. Tembleque comes from the word “temblar” which means to tremble or shake which perfectly describes this jiggly coconut pudding. This simple dessert only takes about twenty minutes and four ingredients: coconut milk, sugar, salt, and cornstarch.
It is very easy to make and incredibly delicious. You can flavor it the way you want as well by adding ingredients like vanilla essence, cinnamon, and lime/orange peel. I kept mine simple and only added sugar and salt.
This pudding is the consistency of Jello, but we still call it a pudding for some reason. You can eat it by itself or with some fresh fruits. My mom likes it by itself, but I prefer it with fruits or fruit puree because it balances the sweetness of the pudding.
I used this recipe by Simply Recipes, but I left out the cinnamon, vanilla, lime peel.
